Teriyaki Enoki Mushrooms
Light, savoury and ready in just five minutes, these Enoki mushrooms are quickly sautéed and coated with teriyaki and soy sauce. Black sesame seeds and fresh chives add the finishing touch to this simple Japanese-style side dish.
Ingredients
- 7 oz (about 200 g) Enoki mushrooms
- 1 tbsp coconut oil
- 1 tbsp teriyaki sauce
- 1 tbsp soy sauce
- 1 tsp black sesame seeds
- 1 tbsp sliced chives

How to make it

Prepare the Enoki - Cut about 1 inch from the base of the mushrooms. Gently rinse the Enoki and pat them dry.

Separate the mushrooms - Divide the Enoki into approximately 6 small bundles.

Sauté - Heat the coconut oil in a cast-iron skillet over medium heat. Add the Enoki and cook for about 2-3 minutes, turning the bundles frequently so they cook evenly.

Add the sauces - Reduce to low heat and add the teriyaki sauce and soy sauce. Cook for another 30 seconds. Add a little more sauce to taste if desired.

Finish and serve - Garnish with black sesame seeds and sliced chives. Serve the Enoki over sushi rice, add them to vegetable sushi rolls, or use them as a topping for tofu steaks.
